Does anyone know where I can get pork back fat in Brisbane, Most butchers I've asked seem to have no idea. Bonus points if its free range yadda yadda

What volume are we talking about? You can get a good cup or so out of a good pork belly or shoulder?

It'll vary but a kilo or 2 so much more than a cup.

What’s it for? Mixing into sausages? If so you could ask a butcher if they get any back fatters in and could get some fat from that. Otherwise if you just want to render it down for lard I can get you things like flare fat (fat from inside the belly) as I work at an abattoir that does pigs

Um not sure about back fat specifically but you could try a market.
There’s one of the coast called Ferry Road market and they have stuff like this.

Maybe try a few places that sell whole pigs. I know there are one or two places out towards ipswich. Will message a mate and ask.

Call Salm's meat carindale. They stock organic pork from one of the small farms near goondawindi (I can't recall the farm's name sorry).

Try Meat At Billy's in Ashgrove, they work with people like Eggcettera farms, which is where they get their pork from and might be able to help you out with that sort of an order

Nah lard is rendered pig fat to be used as cooking oil, what I'm talking about is just fat that you could render into lard or in my case use for sausage or ramen.
