How do you know if heavy whipping cream is bad?

If you’re heavy cream has been left out of the fridge or it’s past the expiration date there are a few simple methods for telling if it has gone bad.

Keep in mind that heavy cream can separate and still be good. A small amount of liquid on the top is not necessarily a reason for concern. If your cream is separated check the signs of spoilage below before throwing it out.

You may also find a subtle yellow hue to your heavy cream. This is a result of enzymes in the cream. This is not an issue and does not mean your cream has gone bad.

Smells Sour

If your heavy cream has a strong sour or fermented aroma then it has spoiled. Some will find that spoiled heavy whipping cream will smell similar to sour cream. If this is the case it’s not safe to consume.

Mold

Spoiled heavy cream may have mold forming on the surface. At this point the cream has generally started to separate from the milk and the color has changed. Mold is a sure fire way to know your heavy cream has gone bad.

Doesn’t Whip

Heavy cream that has gone bad will have separated and will no longer whip properly. If you are trying to whip your heavy cream and it is not forming stiff peaks it’s safe to assume it is no longer good.

Heavy cream should form a thick and creamy texture so a thin and runny consistency is a bad sign.

Tastes Off

Spoiled heavy cream will taste off. It could taste tangy or like curds. This off flavor means your heavy cream is no longer safe to eat.

Does unopened heavy whipping cream need to be refrigerated?

Yes. Unopened containers of heavy cream need to be refrigerated. All perishable dairy products must be kept cold and heavy cream is perishable.

Is it OK for heavy cream to have lumps?

Maybe. If your cream just has some separation and shows no other signs of spoilage your heavy cream is safe to use. But if it show other signs of spoilage such as a sour smell, taste, or does not whip, then your cream is not good to eay.

Does aerosol whipped cream need to be refrigerated?

Yes. Canned whipped cream is a perishable dairy product and requires refrigeration.

Whether you're cautiously eyeing the heavy cream left on the counter at the coffeehouse, or you forgot to put your carton back in the refrigerator after whipping up a pie, you are right to be wary of room temperature heavy cream. While it's safe to leave it out for a short length of time, knowing how to safely store your heavy cream will not only keep foodborne illness at bay, it will also extend its shelf life so you can enjoy it longer.

Heavy Cream at Room Temperature

Cold perishable food items like heavy cream should not sit out at room temperature for more than two hours — or one hour on hot days when temperatures reach above 90 degrees Fahrenheit. Potentially harmful bacteria will begin to grow and multiply once the cream reaches 40 degrees F, at which point it should be discarded for safety purposes. If you must leave heavy cream out for any amount of time, place it on ice to keep it cold for as long as possible.

Proper Storage of Heavy Cream

You will greatly extend the shelf life of your heavy cream with proper storage. Always keep your cream in the refrigerator until the last possible moment, and return it to the refrigerator as soon as you're done with it. Keep it in its original packaging or an airtight container to prevent the introduction of contaminants and bacteria. Stored in the refrigerator, heavy cream will last up to four days after the sell-by date on the carton. Alternatively, you can freeze it for up to four months.

When to Discard

Along with following the guidelines outlined above, always use your best judgment when determining whether heavy cream is still safe to consume. If you notice a sour smell or curdling, discard it immediately. Note that frozen cream, once thawed, may separate; this is not a sign that the cream has spoiled, but rather that the butterfat has settled to the bottom. Do not discard; instead, simply shake the container vigorously to re-emulsify the cream before use.

Heavy Cream Substitutes

If you find that your heavy cream has been left out too long, or it is showing signs of spoilage, try using one of these substitutes with items you may already have on hand. For baking or cooking, use 3/4 cup milk and 1/3 cup butter or margarine for every cup of heavy cream needed, or try 2/3 cup buttermilk and 1/3 cup flavorless oil, such as canola. For any use, including making whipped cream or for coffee, substitute an equal part whipping cream.
