An easy way to make delicious gluten-free bread in a bread machine. All the tips for making a gluten-free bread loaf perfect for sandwiches or toast!! So it is not very often you come across a great recipe for gluten-free bread....when you do, you probably should sing from the mountain tops like in the Sound of Music! Yes....sounds silly
but a good gluten-free bread recipe is like diamonds to gluten-free foodies. I may be overacting but great, hot bread is the thing I miss the most about being gluten-free. I actually like the taste of gluten-free pasta and I love using almond meal when baking...but gluten-free bread in a bread cooker is a dream come true!

So I have to be honest and say I have experimented with cooking bread in the bread cooker a lot....sometimes it came out like a tiny rock cake and other times it just tasted really gritty. I think I am so close with this one...I just can't decide whether two eggs or three is the way to go.
Maybe you could have a try and let me know what you think?
I have cooked this loaf with three eggs and it tastes fantastic especially when it is hot and topped with ham and tomato sauce...(it has a slight egg flavour to it that goes perfectly with ham)
When you leave it to cool, it just becomes bread that is perfect as toast, smothered in butter, topped with a range of toppings, and even made into garlic bread!! ...mmm...gluten-free heaven 😉
Dry Ingredients
- 3 ½ cups of gluten-free self-raising flour (I use the Orgran brand or DIY Gluten-Free Flour Mixes)
- 1 tablespoon of xanthan gum
- 2 tablespoons of sugar
- 1 teaspoon of salt
- 1 sachet (7 grams) of dried yeast
Wet Ingredients
- 1 ½ cups of almond milk (or milk of your choice)
- ¼ cup of olive oil
- 3 eggs - medium
- 1 teaspoon of white vinegar
Method
- Mix all the dry ingredients together in a bowl.
- In another bowl, mix all the wet ingredients until blended.
- Place the wet ingredients into the pan of the bread machine.
- Spoon in the dry ingredients on top of the wet ones.
- Mix the dry and wet together slightly in the bread pan.
- Turn on the bread machine and bake on the basic setting. (My machine takes 3 hours and 5 minutes.)
(Oh! it fills your home with the wonderful smell of home-cooked bread)
- When the bread has finished cooking leave the bread in the bread pan for 15 mins and then turn it out and let it cool.

It is easier to slice when it is cold.... but large, crusty slices when it is warm, is just as good!
We have even toasted slices of this bread on the open fire...
and it added that
perfect smoky flavour...and all it needed was a good dollop of butter!
