I'm new to meal prepping and both my cooking skills and disposable income are minimal. Show Can baked potatoes be kept as leftovers in the fridge for a few days? I'm thinking about adding potatoes to my normal meal prep routine (chicken and veggies) to add in some carbs to help fill me up. Until a few minutes ago I was certain that baked potatoes could last for a while in the fridge, but I Googled it and saw a bunch of nightmarish stuff about baked potatoes causing serious health issues if eaten more than a day after. I figure that's most likely just the usual Internet alarmist stuff (similar to how if you Google any kind of ache or pain it'll tell you you're dying of cancer) but I wanted to check here just to be safe. r/Cooking So I parboiled some potatoes for French fries but something came up and I won't be able to cook it until Saturday. I work for a large chain and anything precooked is allowed to be kept for a week or more depending on what it is. Less for meat and longer for veggies. If you’ve parboiled them you’re fine for a bit.
