Collagen makes up the majority of this tissue. Collagen is a triple-helix protein that needs to be cooked at the right temperature and for the right amount of time.

Temperature AND Time

The ideal doneness temperature for brisket is 200-205F (93C), while medium-rare doneness for beef is at 130F (39C). Why is the price so high? Because connective tissue does not begin to unwind and dissolve until temperatures of 160-170F (71-77C) are reached. For the optimum breakdown of connective tissue, the brisket should be cooked for many hours at a temperature of 160-205F (71-96C).

When the stiff collagen has completely dissolved, it becomes gelatin. Gelatin can absorb ten times its own weight in liquid. This means that the newly rendered gelatin can absorb all of the moisture released by the protein fibers.

Smoking Meat Low & Slow

Low and slow cooking methods were developed to break down thick connective tissue in pieces of meat such as beef brisket and hog shoulder. In this case, it’s beef that’s been smoked.

Meat is slowly cooked in a smoker setting at temperatures ranging from 225 to 275 degrees Fahrenheit (107 to 135 degrees Celsius). This low-temperature range gives connective tissue plenty of opportunity to break down. You could cook a brisket or hog shoulder quickly over high heat (500-700F) on a grill to a pull temperature of 203F (95C), but the connective tissue would not have disintegrated. The meat will still be tough if it isn’t cooked slowly and for a long time.
