STEAMING your eggs is the secret to this fool proof method for 'boiling' perfect, easily peeled eggs. Here at Birdsong Farm we eat and sell duck eggs, so this post includes the times appropriate for duck eggs which are similar to jumbo chicken eggs. No fancy appliances needed: All you need is a simple steaming rack and a pot (with lid) large enough to fit your eggs.

  1. Steaming your 'boiled eggs' is SO easy: First place the steaming rack into a pot and fill with hot water up to the bottom of the rack.

  3. Place your lid on the pot and turn the heat back up to medium high. Start your timer as soon as you see steam building up under the lid. This may be almost right away depending on how long it took you to add the eggs to the pot.

  4. For 'hard boiled' duck eggs i steam mine for 15 minutes. If you prefer a softer boiled yolk for ramen eggs or are steaming chicken eggs experiment with shorter times until you find the perfect number for you.

  5. When your timer is up carefully move the hot eggs into an ice water bath with a slotted spoon and allow to cool. Now you can peel your eggs beautifully! Keep your boiled eggs in the fridge for a week or 2 and enjoy as breakfast, lunch or snacks..... or make a batch of devilled eggs and wow your guests with how picture perfect they look!
