Chicken Pot Pie with Puff Pastry

My little 6 year old and my husband’s friends who came over to watch the game and they both raved about these! They’re a great hearty appetizer using leftover turkey for sure. Use rotisserie chicken too for some finger foods year round.  Either way this is delicious.

Yes you may have tried making an air fryer frozen pot pie before and that was great. Skip the pan entirely with these chicken hand pies because this way you can eat the whole thing!! And they’re a great grab and go lunch when you’re on the go.

Air Fryer Chicken Hand Pie

Here are all the ingredients you will need for chicken pot pie muffins. Super simple right??!! This is why Pepperidge Farm Puff Pastry is my “go to” when it comes to easy and really yummy meals! It is super easy to just defrost, cut, spoon in your ingredients, and they puff up looking pretty in the oven!

  • Just grab a cooked chicken (I use rotisserie a lot because it is already done and ready to create)
    • or leftover chicken breasts are wonderful too, I hate wasting food
  • You can use canned and drained mixed vegetables like Veg All
  • A roll of frozen puff pastry sheets, left on the countertop beforehand to get closer to room temperature so it unfolds easier
    • refrigerated or an easy 3 ingredient pie crust rolled thin on a lightly floured surface would work too
  • Some condensed cream of chicken or mushroom soup for creaminess
  • Salt and pepper to taste
  • A whisked egg wash for the top so it gets shiny and pretty, optional

Sometimes I like some dill and garlic powder in the mix too, use your favorite seasonings really.

Meat Hand Pie

Just take the chicken off the bone and cut it up into bite size pieces! Add all the other ingredients together and you are on to your next step!

  • You can find it in your local grocery store’s freezer aisle for under $5.  It’s really reasonable, you know how I love inexpensive meal ideas. Remember you need a little bit of time for it to defrost first.

It takes about 30 minutes once you take it out of the freezer to be just right. Begin cutting it into just the right shape. Use a glass for round if you’re adding into a muffin tin or a rectangle like you see here for your Ninja Foodi or other hot air machine.

I had some mushrooms in the fridge so I decided to add these to the mixture this time too. I have used dried cranberries and/or walnuts at times too! This is a great dinnertime meal or after Thanksgiving when you have all that extra turkey. Just substitute the chicken for leftover turkey and you have yourself a great meal.

What is the meat in hand pies made of?

You literally could use anything. We show you here how to use precooked chicken with a pot pie style filling. If you wanted a taco style I’d use browned ground beef with seasoning and diced onions. Puff pastry works best for the crust. You can bake or air fry like we did here.

Chicken Turnovers

  • Put the vegetable mix (from a can or frozen) into a bowl. Add shredded cooked chicken and cream of chicken. Salt and pepper to taste. Mix everything thoroughly and try the filling. If needed, add salt or pepper.
  • Unroll the dough and cut into 4 rectangles. On half of each piece of dough, put 2-3 tbsp fillings. Cover the filling with the second half of the dough, seal the edges with your fingers and also using a fork.
  • Spray the air fryer basket with olive oil oil so they don’t stick. Place the pies inside, brush with the beaten egg on top. Cut two slits on the surface of the dough so that hot air gets inside and the cake bakes faster from the inside.
    • Bake at 340 F for 7-8 minutes until golden brown.
  • Use a spatula to carefully flip each one over and air fry for about 2 more minutes or until pastry is golden browned, no longer sticky, and insides are warmed.

I basically use the same ingredients that are in our simple chicken pot pie recipe here. These are a bit like air fryer empanadas but using a different dough.

If you wanted to bake these on a baking sheet you could do that as well. Timing will more than double but works just as well. Use the same filling and directions above as to how these are made. Instead of using a hot air machine though, preheat your oven to 375 degrees F.

  • Line your sheet pan with parchment paper
  • Lay filled chicken turnovers down, make two slits each and brush with egg wash
  • Bake for about 25 minutes or until tops are golden
  • Total comfort food either way you make them.

Puff pastry pies in air fryer

If you want to make chicken pot pie with puff pastry in muffin tin, this is how. Use a drinking glass to gently press through the dough. Take the circle out and place on the bottom of each muffin cup in the pan.

  • There will be enough for all 12 spots using both sheets in the package.
  • Spray the cups inside your muffin pan with non stick so they come out easily.
  • Take puff pastry out of freezer and put on counter for about 30 minutes to defrost to room temperature, then unfold and lay flat.
  • Mix inside ingredients together in a bowl well and spoon into each muffin tin hole until all are filled.
  • You can add another circle of puff pastry on top if you want or leave them open.
  • Bake at 400 degrees for 12 minutes or until golden brown on the top

You can see here how the dough comes up slightly on the sides. Once it cooks it will puff up to create a cup that holds the chicken and you can hold as well.

  • I added some football shaped tops to some and covered others completely using the dough that was left. It depends on the occasion as to which way I do it. Leaving it open entirely is good too.

Can puff pastry be cooked in an air fryer?

Preheat the air fryer to 390°F and then place the turnovers in the air fryer basket. It takes about 7 minutes of time to air fry pastry puffs. Check after 7 minutes, they should be golden brown.

How long do you cook a pie for in an air fryer?

Instructions.
Preheat the Air Fryer at a temperature of 180°C/350 F for 5 mins..
Pull the Air Fryer basket towards you, rest on a heat proof surface and place frozen party pies into basket..
Push the Air Fryer basket back into the appliance and cook the pies for 15 - 20 mins. Note 3..
Serve with tomato sauce..

How do you use a air fryer for pies?

Whilst you are brushing pies put your air fryer on to 200 degrees Celsius for a few minutes (bake function). Add your pies to the basket. Drop temperature to 160 degrees Celsius allow pies to bake for 10 minutes, then turn up to 200 degrees and bake for another 5-7 minutes until puffed up and crispy.

How long do frozen pies take in the air fryer?
