Bad posture, like sitting with one leg crossed, is how you get lower back pain.
Most of these chairs are designed to support you properly with good posture.
The Embody is designed to flex, and the narrower back is to allow more arm movement than many other chairs - so that you aren't sitting "rigidly."
But if you're always sitting off to one side or at an angle, a chair isn't going to help. The Embody in particular is not a great chair for sitting with a leg/legs crossed, since the front lip is only supported by some plastic runners at the sides.

Unless you're getting a cover made, it's not really possible to have the chair reupholstered.
I was sold the chair on the promise that it was possible and easy to do; but it basically destroys the back of the chair to remove it, because they use tiny (brittle) plastic clips everywhere.
I think you can actually pay to get it 'reupholstered' by them now, but I suspect they just replace the entire back and seat because it costs 3/4 of the price of a new chair (or did when I last inquired).

I used to work from home 2 days a week before Covid, so I was fine using a hand-me-down office chair that my in laws had in the garage.
But ever since 2020 I work from home 99% of workdays and soon my back was acting up.
Tried to remedy the issue with a 200€ Gaming chair from amazon but it made no difference.

One day I saw that Tim Rogers CP2077 review where he talked about HM chairs for 45mins and was like:
"OK I need one of those."

Never thought I'd spend 1400€ on an office chair but considering I sit in it for ca. 40hrs a week, it was the best money ever spent. Back/neck pain isn't an issue anymore.

At first it sounded pretty counter-intuitive that the absence of a headrest would help with my neck pain.
Didn't have any glaring back issues with my old chairs but dialing in the backrest on the embody makes it so fucking comfortable.

All in all, the biggest difference is that I don't feel sore/knackered after a long day at the desk.
After I sign off, I can head downstairs and play with my daughter or do chores right away.

Not sure how old you are (I'm 38) but when you work in IT and you main hobbies are gaming and watching sports, you need to make sure your ergonomics are on point.

Well, you'd think they'd make a chair that could help compensate for those sorts of things. I don't do it all the time but sometimes it's the only way I can feel comfortable and focus.

Edit, just feels like if all that matters in the end is proper ergonomics, what is the point of spending $400+ on a chair?

It's about long-term comfort and having a chair that is adjustable to fit you properly, to give you good support.
A chair can't do anything if the issue is that you're sitting with one leg crossed in it and bending your spine - or if you slouch over to one side and lean on one of the arms.
That's not to say you have to be totally rigid in the chair - the Embody is made to flex a lot. But a chair can't fix posture issues - it can only support you and make that more comfortable.
