  • Step 2

Lay a spring roll wrapper at an angle. Place a scant 1/4 cup filling in the center of the wrapper. Fold bottom corner over filling and tuck in the sides to form a roll. Use your finger to lightly moisten edges with water. Repeat with remaining wrappers and filling. Mist each roll with avocado oil cooking spray.

  • Step 3

Preheat an air fryer to 390 degrees F (198 degrees C).

  • Step 4

Place lumpia rolls in the air fryer basket, making sure they are not touching; cook in batches if necessary. Fry for 4 minutes; flip and cook until skins are crispy, about 4 minutes more.

Tips

I used a mini food processor to chop the carrots and water chestnuts.

4 Method Steps

  • Place the mince (500g pork mince), cabbage (80g (1 cup) finely shredded cabbage), shallot (4 green shallots, thinly sliced), carrot (1 large carrot, peeled, coarsely grated), garlic (3 large garlic cloves, crushed), ginger (1 tbsp finely grated fresh ginger), pepper (1/2 tsp white pepper) and soy sauce (1 tbsp soy sauce) in a large bowl. Use clean hands to mix until well combined.

  • Carefully separate the spring roll pastry (250g pkt frozen spring roll pastry, just thawed) sheets and stack loosely together. Cover with a clean dry tea towel, then a clean damp tea towel to stop the pastry drying out.

  • Place 1 spring roll wrapper, with a corner closest to you, on a clean work surface. Place 2 heaped tablespoonfuls of the mince mixture across the wrapper, about one-third of the way from the corner closest to you. Dab some water onto the corner furthest from you. Fold the corner of the wrapper closest to you over to cover the filling. Roll over once, then tuck the sides in and continue rolling neatly to form a log. Place onto a tray and cover with plastic wrap. Repeat to make 20 lumpia. Spray with oil.

  • Place a batch (see note) of lumpia into the air fryer basket, leaving a little space between each roll (see notes). Cook at 190C for 10-12 minutes or until crisp and golden. Serve with the sweet and sour sauce for dipping (Bought sweet and sour sauce, for dipping).

Recipe Notes

We cooked the lumpia in 2 batches using a 7L capacity air fryer, however, the size of your air fryer will determine how many batches you need to cook.

If you want to serve them all at the same time, place all the cooked lumpia back into the air fryer basket (it doesn’t matter if they are crowded as they are just being reheated) and cook at 180°C for 5 minutes.
