Main ingredientsYou’ll need a fresh pineapple to make this recipe. I took the easy route and bought one that was already peeled and cored. The other key ingredient you’ll need is dark chocolate (or you can substitute whatever type of chocolate suits your palate and dietary requirements – there are plenty of vegan and paleo diet friendly options to choose from these days). If you prefer to keep this recipe low in sugar, choose a variety of chocolate that contains at least 75% cacao solids. Generally speaking, the higher the percentage of cacao solids, the lower the sugar content. Optional toppings for this chocolate covered pineappleI love topping these chocolate pineapple rings with freshly grated lime zest or unsweetened shredded coconut. Finely chopped macadamia nuts are a delicious option too. How to make themThis chocolate covered pineapple is easy to prepare. Start by peeling, coring, and slicing the pineapple (or do what I did and buy one that’s already peeled and cored so all you have to do is slice it). Depending on the size of your pineapple, aim for 7-8 slices, with each slice being approximately 2/3 inch thick. Next you’ll melt the dark chocolate. I prefer to do this in the microwave because it’s so quick and easy. To melt chocolate in the microwave, roughly chop it or break it into pieces, then add it to a microwave safe bowl. Heat the chocolate on high power for 20 seconds, then stir. Repeat until the chocolate is completely melted. Depending on the strength of your microwave this should take about 1-2 minutes total. Alternatively you can melt the chocolate in a pot on the stove set to low heat, stirring constantly. Or you can use a double boiler method to melt the chocolate if you prefer. Once the chocolate has melted it’s important to work quickly while it’s hot. It has a thinner consistency at this point and if you wait too long it will thicken as it cools which makes it more difficult to coat the pineapple rings properly. Use two forks to dip a pineapple ring in the melted chocolate. Gently flip it over a couple of times to ensure that all surfaces are thoroughly coated, then use the forks to lift the pineapple and allow any excess chocolate to drip back down into the bowl. Place the chocolate dipped pineapple on a piece of parchment paper on a large plate or platter. Repeat with the rest of the pineapple rings. You may need to use a couple of plates to fit them all. The next step is to sprinkle on any optional toppings while the chocolate is still wet. My personal favorite is freshly grated lime zest. Unsweetened shredded coconut and /or finely chopped macadamia nuts are delicious toppings too. The last step is to refrigerate them for at least 30 minutes to allow the chocolate to harden completely before serving.
