Materials

  • 1 1/2 cups Yellow Cornmeal
  • 1/2 cup All Purpose Flour
  • 2 teaspoons Baking Powder
  • 1/2 teaspoon Salt
  • 1 cup Milk
  • 1 small Onion minced
  • 1 Egg lightly beaten
  • Oil to fry

Instructions

  • In a medium mixing bowl, combine cornmeal, flour, baking powder and salt. Stir to mix.

  • Add milk, onion and egg. Stir until well-blended into a batter.

  • Allow batter to stand 5 to 10 minutes before frying.

  • Pour 1-inch oil in large heavy skillet. Place over medium heat and heat until hot and shimmering or about 375°F on deep fry or candy thermometer.

  • When oil is hot drop batter by rounded tablespoonfuls into hot oil.

  • Fry, a few pieces at a time, for 2 minutes or until golden brown.

  • Remove to a paper towel-covered plate to drain.

  • Serve hot as a side to BBQ, Catfish, Fried Chicken or other Southern Favorite.
